These nutritious cookies are flavored with fresh lemon and sweet blueberries, and make for the perfect healthy breakfast treat.

While I can’t promise these cookies will stop your fingers from reaching for the snooze button, or give you perfectly well behaved children, they can get a nutrition filled breakfast on the plate and simplify your morning.

Ingredients:
- 2 tablespoons flaxseed meal
- 2 1/2 cups quick oats (gluten free if needed)
- 1 large or 2 small bananas
- 3/4 cup applesauce
- 1/2 coconut butter, melted (can sub almond butter)
- 1/3 cup maple syrup
- Zest of 1 lemon
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1 cup frozen blueberries
Directions:
1. Preheat the oven to 350 degrees. Line a baking sheet with nonstick foil and coat it with nonstick spray. Set aside.
2. In a small bowl, whisk together the flaxseed and 1/4 cup water. Set aside to thicken.
3. In another bowl, mash the banana.
4. Stir together the mashed banana, flaxseed mixture, applesauce, coconut butter, maple syrup, lemon zest and juice.
5. In another bowl, whisk together the oats and salt.
6. Add the wet ingredients into the dry and stir to combine.
7. Add in the blueberries and gently fold to incorporate.
8. Form the dough into cookie sized rounds. Line them up on the baking tray.
9. Bake for 25-30 minutes or until the edges of the cookies are browned and the center is cooked through.
